Red Pepper One Side Breaded Pork Medallion


Serves 2

Ingredients:

2 Pork Medallions, 1 ½" thick

¼ cup Whole wheat Breadcrumbs

1 Egg

1/3 cup Flour

2 tbls grape seed oil

2 tbls butter

Salad:

1 ½ cup Parsley chopped

1 ½ cup Baby Spinach chopped

1 ½ cup Kale chopped

¼ cup chives chopped

1/3 cup diced shallots

3 garlic cloves chopped

¼ cup Pickled Red Onions

3 tbls. Olive oil

Sauce:

1/3 cup Red Pepper Vinegar

Black Pepper (to taste)

Sea salt (to taste)

Procedure

1- Preheat oven to 375 degrees.

2- Flour one side of the pork medallion. Egg only that side, and then bread the same.

3- Preheat Grape Seed oil and butter in an oven proof skillet over medium heat. Place the pork, breaded side down, into hot oil. Cook until the bread is brown, about 1 minutes. Then flip them over add Salt and pepper and place in preheated oven for about 10 minutes or until cooked through.

4- While the pork is cooking, heat the olive oil in another skillet and sauté onions and garlic until translucent. Add in Parsley, Spinach, Kale, Chives and Shallots until tender, about 4 minutes (Careful to not overcook). Sea Salt and Pepper to taste.

5. Cover the Pork with Red Pepper Vinegar.
